As a child I was not a huge chocolate girl, which made me fall in love with Snickerdoodle cookies. These are refined-sugar free, paleo, egg-free and give me all the feels of the ones I ate growing up!
Ready in 30 minutes Serves 14-15 cookies
- 1 flax egg
- 6 tablespoons softened unsalted grass-fed butter
- ¼ cup plus 2 tablespoons maple sugar
- 1 teaspoon vanilla extract
- 1 ¼ cup almond flour
- ¼ cup coconut flour
- ½ teaspoon cinnamon
- ¼ teaspoon baking soda
- ¼ teaspoon cream of tartar
- ¼ fine sea salt
- 2 tablespoons maple sugar
- 1 ½ teaspoon cinnamon
Head to Hummusaspien website for the instructions! I did everything the same except make the flax egg by by combining 1 tablespoons of ground flaxseed and 2.5 tablespoons of hot water. Whisk until mixed and let sit for 10-15 minutes.
Then sub maple sugar for cane sugar and mine took 13 minutes to bake!
